1.Preheat grill to high. Line grill tray with foil.
2.Heat oil in a large saucepan. Saute onion and garlic 2 minutes, until onion is tender.
3.Stir in stock and tomatoes. Simmer 5 minutes. Stir in beans; season to taste. Simmer further 5 minutes.
4.Meanwhile, arrange bread slices on grill tray. Grill 1-2 minutes, until toasted on one side. Turn over and sprinkle cheese evenly over each slice. Grill further 1-2 minutes, until cheese melts. Serve soup sprinkled with chives. Accompany with bread pieces.
You could use chopped chives in place of the parsley.
