1.In a large frying pan add the mince and cook, pressing with a potato masher until crumbled. Add the onion and garlic and celery if using, and cook gently till soft. Add the cumin and Mexican seasoning and mix well.
2.Stir in the rice, salt, tomatoes and stock and then add the vegetables. Bring the mixture to a simmer, stir once to ensure nothing is sticking and cover.
3.Reduce the heat to low and cook without stirring for 25 minutes. Remove the cover and give it a stir before serving.
This is a good way to make a small amount of meat go a long way.
