1.Heat oil in a flameproof casserole on high. Brown lamb 4-5 minutes, turning once. Remove to a plate.
2.Saute onion in same pan 2-3 minutes, until tender. Add cayenne, coriander, cinnamon and ginger. Cook, stirring, 1 minute. Add water and quince paste. Bring to the boil. Reduce heat to low.
3.Return meat to pan. Cook, covered, stirring occasionally, 1 hour, or until lamb is tender.
4.Add kumera. Cook, stirring occasionally, 25-30 minutes, until kumera is tender and liquid thickens slightly. Serve sprinkled with almonds and fresh coriander. Accompany with lemon wedges.
To toast almonds, heat a frying pan over medium heat. Add almonds and cook, stirring often, for 2-3 minutes, or until golden.
