Method

1.Preheat oven to 210°C or 190°C fan. Place potato and oil in a baking dish and toss to coat. Bake for 40 minutes, until golden and crisp.
2.Combine avocado and remaining ingredients in a bowl. Season. Season wedges and serve with guacamole for dipping.
