Ingredients: 2 400 gram cans white beans, rinsed, drained; 1 red onion, finely chopped; 2/3 cup (100 grams) drained semi-dried tomatoes in oil; 150 gram mozzarella cheese, cut into 1cm pieces; 1/2 cup (75 grams) seeded kalamata olives; 150 gram rocket; Oregano balsamic vinaigrette; 1 clove garlic, crushed; 1 tablespoon finely chopped fresh oregano; 1/4 cup (60 millilitres) balsamic vinegar; 1/4 cup (60 millilitres) extra-virgin olive oil

Method

Tuscan white bean salad

1.Make oregano balsamic vinaigrette.

2.In a medium bowl, place beans, onion, tomato, cheese and olives with vinaigrette; toss gently to combine.

3.Serve bean salad with rocket.
