Method
1.Whisk together egg yolk and mustard in a bowl. Gradually whisk in oil until mixture thickens. Fold in eschalot, coriander, tuna and lemon juice. Season.
2.Spoon into a serving bowl and chill until ready to serve. Serve with grissini.
Grissini are crisp Italian breadsticks, available from supermarkets.
