Ingredients: Tofu pesto; 50 gram firm tofu; 1/2 cup firmly packed fresh basil leaves; 1 tablespoon fresh lemon juice; 1 tablespoon water; 1 (150g) tomato, cut into wedges; 1/2 (125g) avocado, thickly sliced; 100 gram firm silken tofu, diced into 3cm pieces; 50 gram mesclun; 1 tablespoon fresh basil leaves; 1 tablespoon toasted pine nuts

Tofu pesto

50 gram firm tofu

1/2 cup firmly packed fresh basil leaves

1 tablespoon fresh lemon juice

1 tablespoon water

1 (150g) tomato, cut into wedges

1/2 (125g) avocado, thickly sliced

100 gram firm silken tofu, diced into 3cm pieces

50 gram mesclun

1 tablespoon fresh basil leaves

1 tablespoon toasted pine nuts

Method

1.Blend or process ingredients for tofu pesto until smooth.

2.Combine salad ingredients in medium bowl; serve salad topped with pesto.
