Method
1.In a large heatproof bowl, soak noodles in boiling water for 5 minutes; stir to separate strands. Drain.
2.Heat a large saucepan over moderately high heat. Add paste; cook, stirring, 1-2 minutes or until fragrant. Stir in water. Bring to the boil. Reduce heat. Add beans; simmer 2 minutes. Add seafood; simmer, uncovered, 2-3 minutes or until seafood is just cooked.
3.Divide noodles and tomato among serving bowls. Ladle hot soup and seafood over noodles. Serve.
Soup is best made just before serving. You’ll find tom yum paste in the Asian food aisle of major supermarkets or at your specialist Asian grocer.
