Method
Hoisin ketchup
1.Combine the ketchup ingredients and set aside.
Sweet chilli beef burgers
2.Combine the mince, breadcrumbs, sauces, chilli flakes, coriander, salt and egg in a bowl and mix. Form into patties slightly larger in diameter than the buns. Chill for 30 minutes or longer.
3.Prepare the pineapple. Remove the cores from the slices if desired with an apple corer or using a 3.5 cm metal screw cap from a bottle. Place the pineapple pieces in a zip lock plastic bag with the sweet chilli sauce and marinate for 15 minutes.
4.Preheat the grill. Cook the burgers on a greased grill turning once till done to your preference. Keep warm in a low oven while you cook the pineapple. Place pineapple slices onto the grill for 3-4 minutes each side until tender and caramelised.
5.To assemble, spread the bun with hoisin ketchup, add lettuce, beef patty, tomato, a slice of caramelised pineapple, additional burger toppings of your choice and top with the bun lid.

- Serves 4-6. – Both burgers and pineapple can be cooked under an oven grill, in a frying pan or on the barbecue.
