1.Preheat oven to moderate, 180°C.
2.In a non-metallic baking dish, combine stock, sweet chilli, soy, vinegar, hoisin and sesame oil. Add chicken, tossing to coat. Bake for 25-30 minutes, turning chicken halfway through cooking.
3.Allow to cool. Using 2 forks, shred meat well and return to dish. Heat in oven for a further 10 minutes.
4.In a wok or frying pan, heat oil on high. Fry eggs, one at a time, until cooked to taste.
5.Serve pulled chicken with rice, topped with fried egg, sprinkled with sesame seeds, and accompanied with cucumber, lime and mint.
-You can use chicken mixture as a delicious filling for wraps, burgers or tacos.
