Method

1.Place chicken in a shallow dish. Combine lime rind, juice and palm sugar in a jug. Stir until sugar dissolves. Pour half of marinade over chicken, turning to coat.
2.Heat a char-grill or frying pan on high. Spray with oil. Cook chicken for 3-5 minutes each side basting with marinade, until cooked through.
3.Meanwhile, place cabbage, carrot, mango, coriander, oil and remaining lime marinade in a bowl. Season to taste and toss to combine. Slice chicken and serve with coleslaw.

Replace chicken with prawns or calamari for a delicious seafood salad that can be prepared in a flash.
