Take courgettes to tasty new heights with this delicious stuffed courgette recipe. Filled with beef mince and cooked in a cheesy tomato sauce, this dish is best served with plenty of bread to soak up all the flavours

Preheat oven to moderate, 180°C. Lightly grease a 20 x 30cm baking dish.

In a bowl, combine mince, onion, fresh breadcrumbs, grated parmesan, egg, parsley and garlic.

Halve courgettes lengthwise. Scrape out the flesh with a teaspoon, leaving a 5mm-thick shell.
4.
Stuff courgette shells with mince mixture. Place side by side in dish. Pour over passata and sprinkle with combined grated mozzarella and tasty cheese.

Bake for 30-35 minutes until golden and bubbling. Serve with mixed salad and Turkish toast.
Note
- To make it easier to remove courgette flesh, microwave on high for 30 seconds first.
