Mango slaw


1.Make the Mango slaw (see below).
2.In a bowl or processor, place the mince, breadcrumbs, sauces, lemongrass, salt and chilli flakes. Pulse or mix to combine.
3.Divide mixture into 4-6 portions and shape into patties. Cook on a preheated grill or barbecue.
4.To assemble, lightly toast burger buns, spread bases with mango chutney, add a cooked patty and top with Mango slaw.

5.Combine mayonnaise and vinegar in a small bowl. In a medium bowl, combine cabbage, onion and coriander. Toss through the mayonnaise, then fold in the sliced mango. Refrigerate.

Try the burger mix as meat balls and serve with other salads or in a wrap. You can swap the pork mince for chicken if you prefer. Mango slaw is also delicious in fish tacos or sliders.
