Ingredients: 320 gram sliced smoked salmon; 1 red onion (100g), chopped finely; 1/2 cup (90g) drained baby capers, rinsed; 2 witlof (110g), leaves separated; 2 red radishes (70g), trimmed, sliced thinly; 1 baby fennel bulb (130g), sliced thinly; Mustard honey dressing; 1 teaspoon dijon mustard; 2 teaspoon honey; 2 tablespoon lemon juice; 1 tablespoon finely chopped fresh dill; 1/4 cup (60ml) olive oil; salt and pepper, to taste

Mustard honey dressing

1 teaspoon dijon mustard

2 teaspoon honey

2 tablespoon lemon juice

1 tablespoon finely chopped fresh dill

1/4 cup (60ml) olive oil

salt and pepper, to taste

Method

1.Divide salmon among serving plates; sprinkle with onion and capers.

2.To make mustard honey dressing, place ingredients in screw-top jar; shake well. Season to taste.

3.Serve salmon with witlof, radish and fennel; drizzle with dressing.
