Method
1.Rinse and drain jackfruit well then slice thinly (this improves the meaty texture).
2.Heat oil in a medium saucepan on medium heat, add onion and cook for a few minutes until softened and starting to caramelise. Add jackfruit, sauce and cider or beer then simmer for 10-15 minutes, stirring occasionally, until shredded and saucy.
3.Toast buns if desired and spread bases with mayonnaise. Layer with lettuce leaves, sliced cucumber and tomato, then spoon on the warm jackfruit mix and sandwich with the bun tops.
