Method
Salmon patties with roasted cauliflower
1.Preheat oven to 180°C. Line 2 oven trays with baking paper.
2.Mash beans. Add salmon, breadcrumbs, parsley, egg and chopped onion. Season.
3.Shape mixture into 8 flattened patties. Place on one tray, spray with oil. Bake for 15-20 minutes, turning halfway, until golden.
4.Toss cauliflower, tomatoes, capsicum, oil and garlic on second tray. Sprinkle with fennel seeds. Season. Roast for 15-20 minutes.
Dressing
5.Whisk all ingredients together. Season to taste.
6.Serve patties with cauliflower salad, dressing and lime wedges.
