Pawpaw salsa
Method
1.In a large saucepan, heat oil on medium. Cook spices and herbs for 1-2 minutes, stirring.
2.Add cauliflower, fish and coconut milk. Cook, covered, for 15-20 minutes until cauliflower is tender. Season.
3.For the pawpaw salsa: In a small bowl, combine all ingredients. Season. Set aside.
4.Sprinkle curry with peanuts and extra mint leaves. Accompany with rice and salsa.
Note
- Mango can be used in place of pawpaw when in season.
