Ingredients
500 gram beef or pork chipolatas
1 tablespoon olive oil
1 onion, sliced
2 clove garlic, crushed
2 teaspoon paprika
1/2 teaspoon chilli flakes
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1 capsicum, seeded, sliced
100 gram button mushrooms, trimmed, halved
400 gram can diced tomatoes
400 gram can cannellini beans, drained, rinsed
1 cup beef stock
1/2 cup red wine or beef stock
chopped parsley, crusty bread to serve
Method
1. Heat a large frying pan on high. Cook sausages for 3-5 minutes until golden, then remove from pan.
2. Wipe out pan with a paper towel and add olive oil. Heat on high, then sauté onion and garlic for 2-3 minutes until tender. Stir in spices and cook, stirring, for 1 minute.
3. Add capsicum and mushroom, then cook, stirring, for 2-3 minutes. Stir in tomatoes, beans, stock and wine.
4. Return sausages to pan and bring to the boil. Reduce heat and simmer for 10-15 minutes. Sprinkle stew with parsley and serve with crusty bread.
