Pasta with tuna and spinach

Quick, easy and full of flavour, this tasty tortellini dish is tossed with tuna, zesty lemon and fresh vegetables, making it perfect for a weeknight dinner for the family.

Method

1.Cook pasta in a saucepan of boiling, salted water according to packet directions. Drain; return to pan.
2.Meanwhile, heat oil in a large frying pan on medium. Cook onion 2 minutes. Stir in tomatoes, tuna and spinach leaves. Cook 2 minutes.
3.Combine pasta with tuna mixture, lemon rind and freshly ground black pepper. Toss on high heat 1 minute, before serving.

Replace tortellini with other medium-sized pasta of choice.
