Dough
1.To make dough, place flour, yeast, salt and sugar in a large bowl and mix together. Add oil and water and mix to form a dough. Turn out onto a well-floured surface and knead for about 5 minutes – the dough should be smooth and elastic.
2.Put dough in a clean bowl, loosely cover with plastic wrap (or put bowl in a plastic supermarket bag) and microwave for 1 minute on low, then let it stand for 10 minutes. Repeat until dough has doubled in size (two zaps in microwave are usually enough). Alternatively, leave in a warm place until doubled in size.
3.Place a pizza stone, rimless baking tray or cookie sheet in centre of oven and heat to its highest temperature. Prepare a second tray by crisscrossing it with two large pieces of baking paper.
4.Divide dough in half and roll one half out to form a round base – roll it larger if you prefer a thinner base. (The other half of the dough can be frozen or used for a second pizza with toppings of your choice.) Use a rolling pin to lift base onto the paper-covered tray.
Pancetta and mushroom pizza
5.Mix oil and garlic and stir through mushrooms.
6.Spread pizza base with passata, sprinkle with oregano and add mushrooms. Top with pancetta, olives and mozzarella.
7.Open oven and slide the pizza and paper onto the hot tray or stone. Immediately reduce oven temperature to 200°C and bake for 2 minutes then slip the baking paper out from underneath and cook for a further 10-15 minutes or until crust is golden and the top is bubbling (the paper can be re-used if cooking more than one pizza).
8.Garnish cooked pizza with basil leaves and serve.
