Pancakes with strawberries and vanilla ice-cream

This kid-friendly recipe for little buttermilk pancakes features strawberry slices cooked right into the centres. They taste great as a quick snack, or serve with ice-cream, if you like.

Method

1.Sift flour with sugar and baking powder into a bowl. Combine milks, melted butter and egg in a jug. Stir milk mixture into flour until just combined (don’t over-mix batter, as pancakes will be flat and tough – lumpy is fine).
2.Lightly spray a non-stick frying pan with oil and heat on medium. Spoon about 1/4-cup measures of batter into pan, allowing for spreading. Press strawberry slices into each pancake and cook for 1-2 minutes, or until bubbles appear. Turn and cook for another 1-2 minutes, or until golden. Transfer to a warm plate.
3.Wipe pan with paper towel and spray with oil. Repeat with remaining batter and strawberry. Serve with extra strawberries and a scoop of vanilla ice-cream, if you like.
