Ingredients

Method

1.Place noodles in a large heatproof bowl and cover with plenty of boiling water. Set aside for 5 minutes. Drain well, separating noodles with a fork.
2.Heat oil in a wok or large frying pan on high. Fry tofu in 2 batches, for 1-2 minutes each. Drain on paper towel.
3.Add onion and garlic to pan. Stir-fry for 1 minute. Add chicken and prawns. Stir-fry for 3-4 minutes.
4.Push mixture to side of pan. Pour in egg. Scramble with wok charn or wooden spoon. Combine with chicken.
5.Add all remaining ingredients except peanuts, noodles and tofu, tossing well. Stir-fry for 2 minutes. Toss noodles and tofu through. Serve topped with crushed peanuts, coriander and lime.
