Orange cream filling

Method

1.Preheat oven to 160°C. Lightly grease and line 2 oven trays with baking paper.
2.In a small bowl, using an electric mixer, beat butter, icing sugar and vanilla together until light and creamy.
3.Sift flours together. Lightly fold into creamed mixture in 2 batches.
4.Roll half tablespoonfuls of mixture into balls (use lightly floured hands when rolling mixture into balls to help prevent sticking). Place on prepared trays 3cm apart. Flatten slightly.
5.Bake for 12-15 minutes, until golden. Turn trays halfway through cooking time to allow for even browning. Cool on trays for 5 minutes before transferring to a wire rack to cool completely.
6.To make orange cream filling, in a small bowl, using an electric mixer, beat butter, icing sugar, juice and zest together until light and creamy.
7.Sandwich 2 biscuits together with orange cream. Dust tops lightly with icing sugar. Store in an airtight container for 3-5 days.
