1.Preheat oven to 220°C (200°C fan-forced). Heat a medium frying pan over moderate heat. Cook and stir mince, breaking up any lumps, for 4 minutes or until changed in colour. .
2.Stir in taco seasoning mix and 1 cup water. Bring to boil. Reduce heat; simmer, uncovered, for 3-4 minutes or until thickened slightly
3.Meanwhile, place 4 heatproof bowls on a baking tray. Break tacos into large pieces; divide into bowls. Bake for 5 minutes.
4.Spoon beet mixture over taco pieces; top with cheese. Bake for 5 minutes more or until cheese is melted and bubbly.
5.Drizzle with taco sauce; top with sour cream and avocado. Serve at once.
