Method
Marinated feta
1.Divide feta between 2 sterilised jars.
2.Oregano: sprinkle oregano over feta. Season to taste. Cover with oil. Seal jar tightly and label.
3.Chilli and garlic: sprinkle garlic and chilli over fetta. Season to taste. Cover with oil. Seal jar tightly and label.
Marinated mushrooms
4.Combine all ingredients in a medium bowl. Cover. Chill overnight, or until required. Serve with marinated feta, olives, semi-dried tomatoes and toasted bread.
Sterilise jars by immersing in boiling water for 1 minute and drying upside down on a clean tea towel in a very slow oven, 120°C.
