Kati-style beef chapati rolls

A kati roll is the Indian version of a takeaway sandwich. This recipe combines tender beef with spices, veges and egg to create an at-home version of this street food-inspired dish

Method

1.In a large bowl, combine steaks, zucchini, vegetable oil, 1 tablespoon lemon juice and garam masala, mixing well to coat. Set aside for 15 minutes.
2.In a medium bowl, combine onion, remaining lemon juice, sugar and salt. Mix well, then set aside for 10 minutes.
3.Preheat a chargrill pan or barbecue grill on high. Thread beef and zucchini alternately on to four skewers, then brush with oil. Grill for 8-10 minutes, turning, until browned and cooked to taste.
4.Toss tomato and carrot through sliced onion mixture. Divide beef skewers and vegetable mixture between four flatbreads, then serve accompanied with yoghurt.

5.In a jug, whisk eggs with coriander, then season. In a medium frying pan, heat 2 teaspoons oil on high. Toast 1 chapati in pan for 1 minute until golden brown. Pour one quarter of the egg mixture around edges of bread in pan, allowing to run underneath. Cook for 1 minute until egg sets, then flip over and toast the other side for 30 seconds. Remove from pan, then repeat with remaining ingredients.
