Janet’s fruit bran loaf

Try this economical fruit loaf recipe that was given to Mum by her good friend Janet years ago. It is always a firm family favourite – on its own or slathered in butter.

Fruit bran loaf

1.Grease a loaf tin and line the base with baking paper.
2.In a bowl, soak the bran, sugar, apricots and honey with the milk for 1 hour.
3.Preheat oven to 180°C. Mix in the flour, baking powder and nuts until just combined.
4.Pour into the loaf tin and bake for about 1 hour or until a skewer comes out clean.
5.Remove from the oven and leave in the tin for 10 minutes before turning out.

This loaf is so popular and easy to make that I usually double the recipe and make two loaves at a time. It’s a far more economical use of the oven. The loaf toasts well too!
