Method
1.Preheat oven to moderate, 180°C. Arrange bread in single layer on an oven tray. Drizzle with half oil and season to taste. Bake 6-8 minutes, until crisp and golden.
2.Meanwhile, heat char-grill pan on medium. Brush chicken with remaining oil and season to taste. Cook 5-6 minutes each side, until cooked through. Rest 5 minutes. Slice thinly.
3.In a small jug, whisk all ingredients together. Season to taste.
4.In a large bowl combine, avocado, celery and onion. Toss with half the dressing.
5.Serve salad topped with sliced chicken, croutons and drizzle of remaining dressing.
Add some sliced apple or pear for extra crunch. You could also crumble over 50g blue cheese.
