Method
1.Preheat oven to 180°C. Lightly grease and line a 20cm x 30cm slice pan with baking paper. In a small saucepan, combine butter, honey and sugar, stirring over low heat until sugar dissolves.
2.Bring to the boil and cook 1-2 minutes, until syrup thickens slightly.
3.In a large bowl, combine all remaining ingredients. Pour syrup over dry ingredients. Mix until well combined. Pour mixture into pan, spreading evenly.
4.Using a fork, press mixture down very firmly (this is a very important step to help stop the slice crumbling).
5.Bake 10-15 minutes, until golden Cool completely in pan. Chill 2 hours. Cut into fingers to serve. Store in an airtight container.
If your child has a nut allergy or school has a nut-free policy, replace almonds with desiccated coconut.
