1.Melt butter in a frying pan over medium heat. Sauté corn and spring onion for 2 minutes. Stir in flour and cook for 1 minute. Stir in cream, then simmer for 2-3 minutes. Stir in cheese. Season to taste.
2.Rub salmon fillets with olive oil. Season. Char-grill for 2-3 minutes on each side. Serve on creamed corn with lemon wedges and onions.
