Method

1.Cook beans in a large saucepan of boiling, salted water for 5 minutes, until just tender. Drain and plunge into iced water. Drain again.
2.Combine beans, watercress and parsley in a large serving bowl. Just before serving, pour over combined oil, lemon juice, mustard and sugar and toss to coat. Season to taste and top with almonds to serve.
