Method
1.Preheat oven to 200°C.
2.Slice potatoes into chips, pat dry with a paper towel, then place in a single layer in a roasting dish. Drizzle with a little oil and toss to coat. Bake for 30 minutes, or until golden and crisp.
3.Meanwhile, chop fish into 1cm chunks, or pulse in food processor just until chopped.
4.Place fish, dill, onion, breadcrumbs, lemon zest, salt and egg in a bowl and mix well.
5.Shape fish mixture into 4 patties; if it’s sticky, dust your hands with flour. Refrigerate for a few minutes before cooking.
6.When chips have been baking for 15 minutes, heat a large frying pan over a medium heat, add a drizzle of oil and cook the fish patties until cooked through and golden on both sides.
7.While fish is cooking, split buns and lightly toast.
8.Spread base of each bun with aioli or mayonnaise, cover with fish, top with coleslaw and then the bun lid.
9.Serve with chips.
