Method
1.Preheat oven to 160°C fan-bake and line two trays with baking paper.
2.Mix the flour, baking powder, mixed spice, cinnamon and sugar in a food processor. Add the butter and blitz until it resembles breadcrumbs. Add the beaten egg and pulse until a dough forms. Turn it out onto a floured bench and knead lightly until pliable.
3.Dust the dough with flour and roll out to 5mm thick.
4.Cut into Christmas shapes and arrange on the prepared trays. Bake for 15 minutes or until the edges begin to brown.
5.Cool on a rack.
6.To decorate: Mix the icing sugar and lemon juice until a stiff icing forms. Stir in food colouring if you like. Then use a piping bag to decorate or simply ice biscuits. Dust with icing sugar to serve.
Feel free to add orange or lemon zest for extra zing.
