Method

1.Whisk eggs with cream, then add chives, smoked shaved ham and spring onion. Season well.
2.Heat a large frypan and lightly oil.
3.Add one soup ladle (¼ of the mixture) to the pan and swirl around to cover the base and even out the ingredients.
4.Cook over a low-medium heat for 2-3 minutes until set on top. Flip over and cook the other side until pale golden.
5.Transfer to a plate and roll up. Repeat with remaining mixture, oiling the pan in between.
6.Serve with your favourite fruit chutney, and a green salad.
