Method
1.Preheat oven to 180°C or 160°C fan. Line two large baking trays with baking paper.
2.Sift flour, a pinch of salt, spices and sugars into a large bowl. Add butter and rub into flour mixture with fingers until mixture resembles breadcrumbs.
3.In a small bowl, combine milk with soda. Stir into flour mixture. Knead lightly to form a firm but elastic dough. Cut dough in half and wrap each half in plastic wrap. Chill for 30 minutes.
4.Roll out one half of dough, leaving other half in fridge, to 4mm thick. Cut out biscuits with a fancy biscuit cutter, such as a heart shape, and arrange on trays, allowing room for spreading, as you work. Re-knead offcuts and chill before rolling out again. Repeat with remaining dough.
5.Bake for 15-20 minutes, until golden. Cool on wire racks. Dust with icing sugar, if you like, before serving.
For cute edible ornaments, use a skewer to make a hole in each biscuit after cooking, then thread through ribbon.
