Ingredients
1 tablespoon olive oil
1 onion, chopped
1 red capsicum, seeded, chopped
1 courgette, chopped
1 garlic clove, crushed
500 gram minced beef
35 gram chilli seasoning sachet
400 gram can diced tomatoes
1/2 cup red wine
1/2 cup water
400 gram can four bean mix, rinsed, drained
1 cup grated tasty cheese
4 sheets filo pastry, quartered
sour cream, mixed salad leaves, tomato, avocado and coriander salsa to serve
Method
1. In a large saucepan, heat oil on high. Sauté onion, capsicum, courgette and garlic for 3-4 minutes until onion is tender.
2. Add mince. Brown well for 4-5 minutes, breaking up lumps. Stir in chilli seasoning and cook for 1 minute. Preheat oven to hot, 200°C.
3. Stir tomatoes, wine and water into mince mixture. Bring to the boil. Reduce heat to low and simmer for 15 minutes. Stir in beans and season.
4. Spoon mixture evenly between 4 x 1 ½-cup ramekins. Sprinkle evenly with cheese. Spray filo pieces with oil. Scrunch and cover filling.
5. Bake for 10-15 minutes until pastry is golden. Accompany pie with sour cream, mixed salad leaves and salsa.
