1.Combine pork, sage, garlic, half the chilli and 1 tablespoon of the oil in a glass or ceramic dish. Cover with plastic food wrap; chill for 5 minutes to marinate. Thread pork onto skewers.
2.Preheat a char-grill or barbecue over high heat. Cook pork, turning for 8-10 minutes or until browned and cooked. Transfer to a plate. Cover with foil; rest for 5 minutes.
3.Meanwhile, combine remaining chilli, remaining oil, apple, carrot and coriander in a bowl. Season.
4.Serve pork with slaw and lemon cheeks.
Prepare skewers a day ahead; cook just before serving.
