Method
1.Place chicken on a board. Pound gently. Top each breast with a slice of ham, 1 tablespoon of cheese and 3 basil leaves. Season to taste. Roll up lengthways, securing with toothpicks.
2.Heat oil in a large frying pan on high. Cook chicken 3-4 minutes, turning, until evenly browned. Remove from pan.
3.Stir wine, stock and mustard into pan. Bring to boil. Reduce heat to medium. Simmer 4-5 minutes, until mixture reduces by half. Return chicken to pan. Simmer, covered 8-10 minutes, until cooked through.
4.Remove chicken from pan. Rest, covered, 5 minutes. Slice, drizzle with sauce and serve with steamed peas.
Cover chicken with plastic wrap and pound with a meat mallet until desired thickness.
