Cheese puffs with cucumber pickles

Method

1.Beat the egg whites until thick then gently fold in the cheese, ham, flour and paprika.
2.Flour your hands and shape the mixture into 12 small balls.
3.Pour oil into a frying pan to a depth of 1cm, heat until almost smoking then fry puffs for a couple of minutes until golden. Briefly transfer to a rack to drain.
4.Quickly place a cheese puff and a cucumber pickle on each skewer and serve while puffs are hot.

Please note: you will need 12 short skewers – decorative ones add a nice touch.
