Method
1.Combine cornflour and water in a bowl and stir well.
2.Heat stock and lemon juice in a fondue pot over flame. When edges begin to bubble, gradually add cheese in 1/4-cup measures. Cook for 10 minutes, stirring, until cheese has melted and is well combined.
3.When cheese starts to bubble, stir in cornflour mixture. Cook for 5 minutes, stirring, until cheese has thickened.
4.Add nutmeg and season to taste. Serve with bread, potatoes and vegetables for dipping.
For an adult version, replace stock with wine.
