Char-grilled chicken and craisin salad

Fresh, healthy and packed full of flavour, this tasty char-grilled chicken salad is perfect for summer. Served with sweet dried craisins, crumbly feta and a zesty lemon dressing, this dish will delight the whole family.

Method

1.In a shallow dish, combine chicken, oil, zest, 1 tablespoon juice and cumin. Season to taste and mix well. Marinate 10 minutes.
2.Preheat a char-grill pan on high. Cook chicken 2-3 minutes each side, until just cooked through and grill marks appear. Remove from heat. Cover loosely with foil. Rest 5 minutes, then slice thinly.
3.In a salad bowl, combine lettuce, chickpeas, beans, feta, craisins and seed mix.
4.In a jug, whisk extra oil and remaining lemon juice together. Season. Drizzle half over salad. Toss well. Top with chicken and drizzle with remaining dressing.
