1.In a saucepan of salted boiling water, simmer carrots until al dente (just a little firm to the bite). Drain and set aside.
2.Heat butter or olive oil in a saucepan or frying pan over medium heat. Add the onion and thyme and sauté until onion is translucent. Add carrots and poppy seeds and continue to cook, while stirring, until lightly browned. Season to taste with sea salt and pepper.
3.Add the orange juice, garlic, honey and parsley. Stir until carrots are well coated.
4.Remove from the heat and serve.
