Method
1.Sift together flour and spices into a large bowl. Stir through carrot, fennel, eggs and milk, mixing well to combine. Season to taste.
2.Heat oil in a large frying pan on medium. Place 1/4-cup measures of mixture into pan in batches, cooking 2-3 minutes each side, until golden.
3.Drain fritters on paper towel. Serve with tzatziki, mango chutney and lime wedges.
Remember to incorporate liquid slowly into flour mixture to prevent lumps.
