1.Preheat oven to 200°C. Lightly grease a 10-cup casserole dish.
2.In a saucepan, heat oil on medium. Cook bacon for 3-4 minutes until fat has rendered. Mix in onion, parsley stalks, garlic and rosemary, then cook for 4-5 minutes until softened.
3.Add mushrooms and cook, stirring, for 4-5 minutes. Stir in flour, then cook for 1 minute. Remove from heat. Gradually stir in combined stock and milk, then return to heat and cook until sauce thickens. Simmer for 3 minutes. Stir broccoli and parsley leaves through. Season.
4.Transfer mixture to a dish. Spray filo sheets with oil and sprinkle with parmesan. Lightly scrunch sheets over filling.
