Method

1.Heat oil in a medium frying pan over low heat. Cook and stir onion and garlic for 5 minutes. Add beetroot; cook and stir for 2 minutes.
2.Add stock to pan. Cook, covered, for 30-35 minutes or until beetroot is tender and liquid has evaporated.
3.Stir in vinegar, sugar and sultanas. Simmer, uncovered, for 3 minutes.
4.Heat a large frying pan over moderate heat. Cook and turn sausages for 8-10 minutes or until cooked.
5.Serve sausages with relish, rocket and crusty bread.
