Method
1.Cook gnocchi in a large saucepan of boiling, salted water according to packet directions. Drain and transfer to a large greased oven-proof dish.
2.Add mascarpone, prosciutto, spinach and tomato. Toss to combine. Season with pepper and top with parmesan.
3.Place under a preheated grill, 5 centimetres from heat source, for 4-5 minutes, until cheese melts and top is golden. Serve.
You can also make this with cooked pasta. Shells work particularly well.
