Method

1.Cook asparagus in a large saucepan of boiling, salted water for 4 minutes, until just tender. Drain. Arrange asparagus on plates.
2.Whisk orange juice and half of rind into Hollandaise Sauce. Spoon a little sauce over asparagus and top with remaining rind. Serve remaining sauce separately.
