Cook pasta in a saucepan of boiling, salted water, following packet instructions.

Heat oil in a large frying pan on high. Saute garlic for 1 minute. Add prawns and cook for 2-3 minutes, until colour changes. Add wine, spinach, onion, zest and juice. Cook for 1 minute until spinach has wilted. Add pasta to pan, tossing to combine. Season to taste. Serve topped with ricotta.
You could use 100g shredded crab meat in place of the prawns, if preferred.
