Method
1.Prepare couscous following packet instructions. Set aside.
2.To make the dressing: In a small jug, whisk all ingredients together. Season to taste.
3.Fluff couscous with a fork. Add carrot, cucumber, mint, currants and half dressing, tossing to coat.
4.Place pappadums in a single layer on paper towel. Spray with oil. Microwave on high (100 percent power) 1 minute, until puffed and lightly golden.
5.Top couscous with egg quarters and extra mint leaves. Serve with pappadums and remaining dressing.
