Method

1.To prepare the dressing, combine all the ingredients together in a bowl. Set aside.
2.Cook the kumara in a pot of salted boiling water for 10 minutes, or until it is tender.
3.Drain well and place the kumara in a bowl. Mash the kumara until it is smooth. Add the salmon, onion, egg and herbs and mix gently to combine.
4.Form the mixture into 12 patties and roll each patty in the breadcrumbs.
5.Heat the oil in a frying pan. Add the patties and cook over a medium heat for 3-4 minutes on each side, or until they are golden
6.Serve the patties with the yoghurt dressing and a green salad.
  • You can use canned salmon instead of the wood- roasted salmon if you prefer.
